    survial question???

    has anyone ever froze tomatoes rather than can them? was told yu can freeze them and if its possible that would make the job much simpler..

    I blanch them in hot water, remove the skin, then freeze them. But I use them later for spaghetti sauce.

    If you freeze them whole, can you use them as "fresh" tomatoes when you defrost them, such as on a salad?

    Hey Larry, Just put them in a freezer bag add a cup of vodka and throw them in the freezer. The booze will kill any bugs left on them and you won't care anyway when ya eat them.

    All kidding aside I really like the oven dried tomatoes. I like to slice and dry them with olive oil and fresh basil and garlic. Don't get no better on a burger!

    well thanks for the help here but the boss didnt want to change the tried and true methodes she knew,, so we canned them the old way got one more bushel to go first of next week..
