Table restoration question.

The story goes.........I was up North building a barn and my wife decided to pull the carpeting out of our bedroom. She leaned the mattress on the dining room table and the kids decided to jump on the mattress (go figure).
Two legs broke off.......So I figure it was a good time to do a long over due refinish and repair. This is an old, oak drop leaf table my mom picked up at a garage sale for $30. It was painted white and when stripped it showed a very nice table under the paint. It expands from 4 ft. to 8 ft.

I pulled it apart and am drawing up prints for future possible duplicating.

The main table top is warped however and I have been thinking about using some cauls and clamps to try and straighten it after wetting the hump in the middle.

So the question is; The top had been finished in poly where the bottom side has old varnish. Is it possible that it warped because of the difference in finish? I am thinking about spraying it with lacquer and my understanding is that I should spray both sides to help equalize how the wood moves. Any ideas?

Also how many coats would be in order?
