Summer must be comming

Grocery store Jalapenos usually are pretty mild and consistent and during the cooking process they mellow out a bit.

For extra excitement we make them with ones we grow in our own garden. Adds a bit of that russian roulette feel when you have no idea if the next one will be sweet or screaming hot :D
 
Now I can handle them and replace the hot dog with Dove meat and we are living high on the hog :rofl:

Or replace the hot dog with shrimp. :thumb:

On the other hand, bacon-wrapped dove breast fillet with a slice of NM green chile* and a stick of sharp cheddar in the middle is pretty awesome, too.







* Ain't nothing in the world that compares to good NM green chile. It's got some spice, but not the paint-peeling burn that a lot of non-NM chile eaters go for.

In my unabashed opinion, the only problem with jalapenos is that they have very little flavor. They either burn your mouth or they don't. But either way, they don't have much to taste.
