Didn't they used to do a lot of 'meat parts' in gelatin? Not sure I'd be wild about the lemon jello, but the process of making corned beef cold cuts sounds interesting....

I like to cut it into little cubes, fry to almost crisp, then scramble eggs into the mix with a touch of onion and maybe 50% potatoes. My kids used to call that "bricks and eggs" when we were camping.
