What is proper electrical switch and outlet height?

Pic #1 is a no no. All wiring methods including conduit need to be 1 1/2 inches below the roof decking to the top of the conduit, mc cable, etc. If you are using NM wire you need to cover the walls and ceiling it is a concealed wiring method only. The window outlet is fine.

Can you run it through the side wall, up through the top plate, then up the side of the rafter? You want the wire to be about 1 1/2" away from any surface, so no nails or screws used for hanging wall board or anything hung on the wallboard to reach the wire, same from the outside.

Building codes will dictate Recp and switch height depending on location of shop - basement - attached garage - stand alone. Rule of thumb at least 12" to the bottom of recp and no less than 36 to the bottom of a switch. In my shop I put every thing at 49" to the bottom so I could stand a sheet of plywood up and not cover it. I also put some recps in the ceiling for drop cords. Just a suggestion.
