The best/safe finish for a crib

Going to be making my grandaughter a crib. What is the safe finish to use for kids. I know there are new rules about this. The wood will be Maple and Cherry. Any help would be great. Have a HVLP spray system. Thanks..
 
Rule 1 - Shellac is edible. Melts in your mouth, not in your hand, is chocolate coated with shellac.

Rule 2 - almost any modern finish is fine, once it has cured. I would probably use a water base lacquer, since it sprays well, has burn in so I can go back and get the odd positions I missed (with all the spindles, etc.), and is marvelously repairable. But as active folks here know, I have a strong bias for Target Lacquer.
 
Charlie pretty much said exactly what I was going to suggest. Shellac is a traditional "kid stuff" finish, but all modern finishes are safe once cured, and waterbased lacquer would be my choice for its durability and repairability.
