finish for natural edge of a burl

one of the items i'll be entering at the fair this year is a walking stick, dark hickory with a burl (cannot remember the species) top. as i'm planning to have the top arc outwards from the ferrule, and finish with the natrual top, what would be a good finish for the natural top?

For durability, I'd go with multiple coats of poly. If you don't want it to be glossy, make the last coat or two a semi-gloss or matte poly.
