Oak countertop finish; advice needed.

My repertoire of finishing techniques consists of three notes: Wipe, On, and Poly.

My son asked me to make a new oak top for a mission-style piece that had been modified by adding a sink. They like the piece, but don't want the sink. The old top is 49" by 22", one inch thick. The wood is obviously oak, stained quite dark brown. I have a piece of the old backsplash to use for color matching, but I don't have a clue about stains, dye or best finish choices for oak. It should be a fairly durable finish,which lets the grain show through.

Any tips or references will be appreciated.
