That brings back memories from several years ago when I harvested some cherry, maple, oak and hickory from my property. From fresh green cut to about 12% took just over a year. One thing I learned from the first time I had some trees cut was to have the boards cut to a full 4/4. The first batch the sawyer set his blade to 1" but the boards I got were 7/8" thick.
The second time I also had several cuts of each species cut to 8/4, figuring I could re-saw down if need be.
