Jim Burr posted a chicken tortilla soup that I will be adding to my collection as it sounds delicious and flavorful.
Here is one of my favorites using ground beef. Not as healthy as Jim's recipe but absolutely delicious to me.
Taco Soup
2 lb ground beef (or ground turkey)
1 chopped onion
In a large pot, cook ground beef and onion together, drain grease.
Add the following to pot. Stir well.
1 can ranch style beans
1 can pinto beans
1 can whole kernel corn
2 cans Rotel diced chilies and tomatoes
1 can diced tomatoes
Mix taco seasoning mix and ranch dressing and 16 oz, water with whisk. Add to the pot.
1 pkg. taco seasoning mix
1 pkg. ranch dressing mix (regular, not buttermilk)
If you like more liquid, add more water (as much as 16 oz.). Simmer 15-30 minutes.
It tastes great as is but you can serve it hot with grated cheese on top and tortilla chips on the side.
