This one is old school and just plain old, from my grandma. We all know lentils are healthy, and soup is just plain yummy. I change the meat in this one to our mood.

1lb lentils - cook with 2 1/2 qts H2O, 2 tsp salt and a bay leaf...don't drain.
1 C chopped onions (Sorry Jim!)
1/3C bacon drippings (olive oil to be a bit healthier)
1 lb of stewed tomatoes
1/2tsp Marjoram leaves
1/tsp salt
Pepper to taste
1C each celery and carrots, sliced how you like it

Sauté onions in olive oil, add tomatoes, herbs, salt and pepper, bring to boil and reduce to simmer
here is the twist. The original recipe calls for meatballs. I have no time to make them, but Costco's are good. We also use a good ham steak cubed to about 1/2". Chicken, turkey whatever...who cares.
Add meat of you choice to tomato mix and add all that to the lentils. Bring to boil then simmer for 30 min. Good soup for an hours worth of work and it freezes very well.
Eat up!!
 
So next week I may have to make some bacon grease. I do like it to fry eggs in as well.

Wait! To make bacon grease I have to cook bacon.....

Double win!
