Had a chat with a guy on smoking-food forum a few days ago. Some of may already know this so it's old hat. He suggested wire shrinking the therma probe on thermometers (the Taylor I'm using) to the connection cable. Reasoning is the there is substantail moisture in a smoker, albeit headed out the exhaust. Shrink wraping stops moisture corrosion at the probe connection. Done!
