I've been making bread, off and on, for years. When the bread machines came along, I started using the dough cycle to make the dough, as it makes a lighter dough than I do by hand. I'ver tried lots of recipes, but the one below always works, and everybody comments on how good my bread is.

For a 1lb. (450g) loaf - 225ml. hot water, 500 ml. flour (white or whole wheat) 1tsp salt, 2 tsp yeast. If the bread is going to be around a whle, you may add 1 tbsp oil or butter, as this helps preserve it a little.

Knead for about 2 minuttes after it comes out of the dough cycle, then shape it into a loaf, or put it in a loaf pan. Allow to rise for 35 minutes in a warm place, and bake for 35 minutes at 375ºF.

OH! A cup is about 250 ml.

I had done bread machine loaves for several years, then saw a recipe similar to yours that called for the same steps as yours. It comes out much better using that process, I think.

Just had lunch, now I'm hungry for fresh bread, thanks to you!!! ;)
