I had to inspect a couple of horse radish manufacturing plants over the years and we wore gas masks in there. The huge batches made it impossible to do otherwise.
I do love horseradish in a number of things. We have a recipe for meat loaf that we think is delicious that uses horseradish. We call it Zingy Meat Loaf.
1 1/2 pounds lean ground beef 1/2 cup minced celery
2 eggs, beaten 1 Tbls. minced parsley
1 medium sized onion, chopped 2 carrots, grated
1 Tbls. horseradish 1 teas. garlic salt
1 teas. dry mustard 1 teas. salt
1/2 cup catsup 1/4 teas. coarse ground pepper
1 mid-size green pepper, chopped
Mix all ingredients lightly and shape into a loaf.
Place on rack in a baking pan; bake in moderate 350°F oven for 1 hour
Makes about 6 servings
Leftovers make for some fine sandwiches topped with mustard.
