Should be On the lathe not Of the lathe

I have projects in mind to make two 12" sanding disc and one 16" backing plate for a donut chuck.

The aluminum stock will be 5/8" and 3/8" thick.
The 3/8" will be mounted to a 6" faceplate and an old 9" sanding plate that I have from an old lathe to make 12" sanding disc.
The 5/8" will be mounted to a 6" faceplate for the backing of a 16" donut chuck.

I am thinking of using these type cutters (last in the top row) to cut them almost all the way through on the lathe so that I know they are centered true.
The final cut will be made with a grinder off of the lathe.
Would you use a different style cutter bit?
Any do's and don't? I will wear and faceshield and long welders gloves just in case.
