Tool Handle Finish

I am not sure if anyone is following my PIP regarding my from scratch stainless steel dovetail saw that I am making, but pretty soon I will need to put a finish on this saw. I used Crab Apple for the wood species, which has some figure and grain to it, but not a whole lot. I guess it does not really matter if the wood pops or not, but it must look great as this is a presentation saw. For that reason it won't see a whole lot of use, but it has to look good.

What would you use for a finish on this? I normally do the 3 coats of poly thing, but since this handle is so small, and I want this saw to look the best it can, I would like some finish ideas for this saw handle.

What would you suggest for a finish, and what preparation steps would you take to make it as flawless as possible?
