BLT's and ABT's Oh MY!!

Tomato harvest means it's bacon, lettuce and tomato sandwich time and Miss Margie makes a mean BLT. Bread of choice is pane Toscano, also called pane sciocco, simple and salt free. Sometimes we use pane Turano from Aldi, both toast up nicely. Each slice gets rubbed with the freshly cut side of a clove of garlic as soon as it comes out of the toaster, just as you would for bruschetta. Add leaf lettuce, tomatoes fresh off the vine, your choice of mayo, a bit of fleur de sel, some fresh ground pepper, and lots of thick cut bacon and you have the heavenly taste of summer...it just makes a body smile.

This year I planted a variety of jalapeno called Mammoth, and they really are. Never grown any big enough to core and stuff whole. Made me wish I had one of those fancy jalapeno racks I never got around to buying. Then I remembered the hard boiled egg rack for my instapot and voila! we were off to the races. Set up a jalapeno processing station on the deck with the SS table from FB marketplace, complete with fan to blow the fumes away. Stuffed with cream and sharp cheddar cheese mixed with some pork rub. There was even room for a Lit'l Smokies link in each one. Mighty tasty!

Cheese stuffed, bacon wrapped jalapeno peppers over coals ..... gotta love it! I also like trying different breads. I like rye breads, italian or european breads of almost all types and my favourite I think is a dark brown pumpernickel rye as long as it's fresh. Fill it full of sliced smoked meat with tomatoes and lettuce ...mm-MM !
