I got creative tonight. It's an international mashup. I call it Japanese Fajitas over rice. I made my standard Fajitas but added broccoli and water chestnuts. I meant to add baby Bella mushrooms, but I forgot them. (Oh well, next time.) It's still delicious! When it's just about ready, I hit it with a bit of Balsamic vinegar and simmer for a couple of minutes. I can't wait to try the mushroom version!
