I got a new toy.

With all the fun I've been having lately smoking brisket, I decided to treat myself to a new knife. My current best knife is probably at least 25 years old, and I've sharpened it a billion times. It's time for a new one. Trimming brisket with that old one is just too difficult. This one's going to make it much easier. I can't wait to give it a shot tonight.

Sweet knife! I really like the looks of it. I have a similar knife from Zwilling J.A. Henckels that's been my go-to meat slicer for decades.

A good sharp knife is a thing of joy. I love using a sharp knife and good steel helps keep the edge.

I have some ceramic sticks that I use before and after my "good knives" are put to work. A razor's edge does the job.
