has anyone ever froze tomatoes rather than can them? was told yu can freeze them and if its possible that would make the job much simpler..:huh::dunno:

I blanch them in hot water, remove the skin, then freeze them. But I use them later for spaghetti sauce.

If you freeze them whole, can you use them as "fresh" tomatoes when you defrost them, such as on a salad?

Hey Larry, Just put them in a freezer bag add a cup of vodka and throw them in the freezer. The booze will kill any bugs left on them and you won't care anyway when ya eat them. :D

All kidding aside I really like the oven dried tomatoes. I like to slice and dry them with olive oil and fresh basil and garlic. Don't get no better on a burger!
 
well thanks for the help here but the boss didnt want to change the tried and true methodes she knew,, so we canned them the old way:) got one more bushel to go first of next week..
