End Grain Ribbons?

I've been fiddling with an old Craftsman block plane I have and so far I am pretty happy with the improvements, but I have a question about sharpness. I scary sharped the blade up to 2500 grit and then leather stropped the blade, but when I tested the plane on oak end grain, it did not produce a ribbon. It did cut a smooth pass, but it was dust on the blade and not a continuous ribbon.

I am having a woodworker brain cramp, but I thought a super, super sharp blade will cut a ribbon of end grain? I'm thinking I should go back and re-scary sharp the cutting iron again until a ribbon emerges. Is this right or am I entering the holy grail of sharpness on this one?
 
Yeah it must be the porous structure of the wood. I can get nice ribbons of end grain from pine and other softer woods, but not the oak. I guess Tod is right, it is sharp enough.
