Anything Leftover Casserole Recipe

There's been so much talk about food lately, I thought I'd share a good recipe for leftovers.

I made this last night with whatever leftovers I could find in the fridge. Everybody loved it, so here's the recipe:

1 bag of frozen shredded hashbrowns
2 C cooked rice (this is what I had leftover, but you could use any leftover cooked potatoes or cooked pasta)
2 C chopped leftover meat or fish (I used a cup of pork and a cup of chicken)
2 C any cooked vegetables (I used string beans and some chili peppers)
2 C any kind of cheese, grated or sliced
9 eggs
1 C bisquick or equivalent (= 1 C flour + 1 1/2 tsp baking powder + 1/4 tsp salt + 1 Tablespoon lard or crisco or butter)
2 C milk (I use 2%)

Brown your hashbrowns in a pan with a little oil and then put them as the bottom layer in a big oven dish (mine was 9 1/2" X 11").

Now put in whatever rice or pasta or potatoes you have leftover.

Now put in whatever meat you have.

Now layer it with cheese. I used some leftover velveeta.

Now put in whatever vegies are handy.

In a bowl, mix the bisquick, the milk and the eggs. Pour it all over the top of your concoction. Let it sit for 5 minutes and soak through the layers. Put it in the oven 325 for about 45 min. - 1 hour. Watch that it doesn't burn. Cook until it is just *set* or quits jiggling. Enjoy.
