I can't help but jump in...I love to cook!!
My mom always made this when I was little and we make 3-4 times every winter.

Chili Colorado - crock pot

4-6 thick cut pork chops or 1 pork loin roast
2 onions coarse chop
3-4 cloves garlic chopped or sliced
16 oz of water
1-2 beef bouillion cubes - we use Knorrs
1-1 1/2 cups red wine
2 tsp cumin
1/4 tsp cloves
1/4 tp sugar
2 cans (14oz?) diced tomatos
1 small can diced green chilies
1 bunch Cilantro

Put everything in the crock pot (if you want to brown the meat before adding it...you can). low about 10 hrs. hour before serving, pull out pork and shred (cut loin into smaller pieces then shred) add half cilantro half way through...the rest 15 min before eating.

We serve it over rice with sourdough. :thumb::thumb:
 
Ooooh, this sounds delicious!

There is a wonderful Mexican restaurant near us that we love. As a matter of fact I had lunch there today with my wife. Quesadillas, one with shredded beef and one with shredded chicken....wonderful. I am still licking my lips.
