i would like to make a holder for some objects that are significant thicker than a knife and am wondering how they make the slots line up for knives in on of those style blocks.
 
my first thought would be that when you are gluing up the block, leave the first one full sized with a shallow dado on the inside side, then on the next blocks make a shallow dado on the table saw about half the thickness of the blades in question, then keep going across, and the last board would be like the first. just the way i would do it. this would have some air flow if the blades happen to go in wet.
 
Larry, the last time I looked into making one of those, iirc the plan called for preparing the block, then cutting off the 'back', as if making a bandsawn box. After you had that cut, you then cut the slots with.a dado stack on the table saw, & glue them back together.

Or just prep a board the same size as your blank & still cut slots with dado stack etc...
