This is a great Crock pot recipe. This recipe is one we haven't fiddled with. Its just too good.

2 lbs skinless boneless chicken breast halves cut into chunks
1 large onion quartered and sliced
2 large cloves garlic, minced
1/4 cut chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
2 15oz cans cannellini beans drained and rinsed
1 lb. Kielbasa of your choice, cut into 1/2 inch slices
1/3 cup dry white wine

Place the chicken into the bottom of a slow cooker. Stir together the onion, garlic, parsley, salt pepper, Cannellini beans and Keilbasa in a large bowl. Pour the mix over the chicken and pour the wine over all the ingredients. Cover, set the cooker to low and cook until the chicken is very tender and the Cassoulet is thickened, about 5-6 hours.

Cooks comments: You can use more chicken but add another can of beans.

Ok! This one is in the crock pot. I added a couple thighs that I seared in olive oil, pepper and Bam! Also used Trader Joes chicken Andouille sausage with a quick sear. Will report if it works!
