for those of you who may prefer indian cuisine....
3 tbls olive oil
3 tablespoons butter
2 large onions chopped (i prefer using the sweet yellow) i use a small chopper, goes faster that way
6 (possibly more) plain yogurt
2 tbls mango chutney
4 cloves garlic chopped
2 tsp turmeric
1 tsp chili powder
2 tsp garam masala
1 tsp curry powder
3 good handfuls of mixed nuts (cashews, almonds, pistachios) provides both taste and texture
3 good handfuls of raisins (provides some balancing sweetness)
5 boneless skinless chicken breast halves (i cut into strips, then squares)
here we go...
1 preheat oven to 350 degrees (175c for everyone else). grease up a 12 qt baking dish.
2 heat oil and butter over medium heat, cook onions until soft
3 place onions, yogurt, mango chutney, turmeric, chili powder, garam masala, and curry powder into blender, blend until smooth. may need a bit more yogurt (told ya!) if you need to thin the mix.
spread out cut up chicken in the baking dish.
4 pour mix from blender to a bowl, then add the raisins and nuts. stir well.
5 pour mixed sauce from bowl and spread to cover all the chicken.
6 bake in preheated oven for 45 minutes, or until chicken is cooked through.
7 serve over basmati rice, enjoy!
