marble repair, not just a glue job

We took in a antique French ornate sideboard. The movers tried to make the move without removing the marble. DUM !
The marble broke in 5 sections. 3 Lt to Rt front to back, with one football size piece in the center 1 Rt to Lt , front to back. The pic is of the completed repair section of an 8' top showing half.
The 2nd is a old repair.

How could they even carve marble like that back in the day. Just amazing, and fantastic you can save it.
 
the marbles pretty soft once softened by water. so making a sharp draw knife similar to the drawing I'd use for pulling the hair off of hide. Shape the cutter sharpen it and start shaving.
