Well, as the title says I made some Jerk Ribs, Jamaican Rice, Caribbean Baked Beans yesterday.
Turned out really well. A bit on the spicy side for the ribs, but the sweet black beans helped to counter the spice, and the rice was nice and comforting.
Jamaican Jerk Spices instead of the traditional sort of dry rub. Seasoned with a paste made from green onions, garlic, thyme, allspice, Habanero peppers, molasses, salt, pepper among other things. A bit on the spicy side, but I like things a little bit warm. Not so hot as to be inedible, but enough to give a nice glow.
