small business liability protection

One of my dreams is to start a micro-meadery someday. I know that I'll need to have some sort of liability protection for the business (C corporation, LLC, something like that). If any of you small business guys are willing to talk about what sort of liability protection you use and why you chose to go that route, it'd be appreciated to help get some ideas.

I'm likely not going to be able to start for 3 years or so, but I've always figured that knowledge and planning never hurts, even if the plans never get executed.
