Vegetable Beef soup

Here it is 12 quarts of hearty Vegetable beef soup. I used the beef ribs from the prime ribs from Christmas and let them simmer for2 hours along with 1 large onion, 2 bell peppers, 2 large poblano peppers and 1 bunch of celery. After sweating the veggies I added two quarts of water the rib bones and a bunch of spices. this simmered for 2 hours. I then added 1 head of cabbage, 1 head of cauliflower, 2 heads of broccoli two yellow squash and 2 zucchini along with 4 quarts of beef broth and a large can of crushed and peeled tomatoes. This simmered for an additional 3 hours.

What doesn't eatn today will get frozen in individual serving and I'll take em out as I need em.

Looks delicious. Had vegetable soup just the other day. It does freeze well and is good to have on hand. Posole from new year then freeze as other soup.
